Alison Phelan is one of our master butcher’s growing up in the family business. Phelan’s butcher’s a focal point of Waterford City was opened in 1954 and the family have been the recipients of many all Ireland and all Munster titles for their famous pudding’s and sausages. The dry aged range like all cuts on the website comes from “Irish” Bord Bia quality assured farms. Alison and the team have chosen our dry aged beef from a small group of farmers from West Cork with a dedication to traditional farmers methods feeding cattle on a rich diet of herbs and grasses to enrich and create a more natural flavour in the meat. The dry aged range is the finest range available on the website and we currently offer cuts from rib joints for the Sunday dinner to succulent and tender fillet, rib-eye, t-bone and striploin steaks.
The West of Ireland Premium Lamb Range
Our online butchers currently offer a fantastic range of finely sourced lamb cuts from lamb shanks to tenderloins. Like our beef careful care and attention goes into choosing these animals and we source only from the best farmers. Diet is crucial to flavour of all our cuts and our lamb is sourced from a select number of farmers along Ireland’s Atlantic fed west coast! It is along the west coast that the rich vegetation of areas such as the Burren pays dividends in flavour in the meat of these wild lambs!
