 Alison Phelan is one of the Master Butchers! She has a great wealth of knowledge in the trade her family’s history in butchery dating back over 51 years to 1954! Her father’s shop is infamous around the streets of Waterford and the wider Munster area for their award winning sausages and pudding! In 2010 Alison took her years of experience and has been pivotal in establishing the novel concept of online meat delivery.

Many Irish butchers will attempt to source from Ireland but it takes a great butcher to recognise a great farmer. Flavoursome rich and succulent beef, lamb and pork is a product of how it is reared. Our master butcher’s source from farms with a dedication to traditional farming practices of herb and grass fed cattle and lamb. This requires careful attention to the soil and flora of the region.

Dry Aged Steaks and Joints

Farmers along the beautiful West Coast of Cork should take the time to commend themselves! Their skill and dedication has yielded something truly special. Dry-Aged beef is the most prized category on our online meat counter! These select group of Cork farmers use traditional herb and grass fed techniques and treat animals with real care and attention. The rich green grasses of the West Cork are nourished by the rain that beats of the Atlantic. The term “dry aged” itself refers to a maturation process where the meat such as fillets, rib-eye’s and t-bones are hung for 21 days which enriches the meats flavour and tenderises the cut!

Wild Irish Lamb

Lamb stew is a Irish favourite and a saviour on those cold winter nights where we can warm our hands on the bowl!  Sourcing great Irish lamb is a difficult task but our butchers have built a rapport with a number of farmers in the West of Ireland. We choose the west due to the traditional farming techniques. Lamb runs wild in many cases feeding on the natural diverse vegetation of areas such as the Burren. This rich diet of flora and wild grasses create a truly wonderful flavour throughout the meat.
